DELICIOUS PEAR AND ALMOND CAKE
So since the theme of April is “All things healthy!” I thought it would be appropriate to share this ridiculously delicious pear and almond cake. See… the pears and almonds are super healthy so it´s kind of a no brainer – right?
MY FAVORITE DAY OF THE YEAR!
Once a year there is a day where you can eat chocolate buns all day long. I call them buns for a lack of a better word but this day is a tradition in Iceland and I celebrate it (or try to) wherever I´m in the world. The only problem is that they are kind of tricky to make and last year… well that was a sad story.
RUSTIC TART WITH APPLES AND PLUMS
Ok – I know it´s kind of crazy starting the week off with a tart but hey – you only live once. This recipe is simple, not too sweet and I absolutely love it. It will be a healthy week though – I promise… but a freshly baked tart – with a nice cup of coffee is something to kick the week off just right…

CREPES WITH BLUEBERRIES
Yesterday I found myself in desperate need for something sweet and delicious. It was pure greed since I already had some soup leftovers for lunch and there would be spaghetti and meatballs for dinner. So – it was definitely just greed but against my better judgment I decided to whip up some crepes. The crepes in this recipe are not the traditional American ones. Instead they are more European – thin and almost the size of a dinner plate.
GUILTY PLEASURE: MY MERINGUE DESSERT
I went through a stage a few years ago where I got obsessed with meringue. It all started shortly after my Hollandaise obsession reached it´s high point and my fridge was filled with egg whites that I had no idea what to do with. So I thought I´d give meringue a try.

These angels are just about the easiest thing you can make and I sometimes call them the last temptation. I don´t know why – but I like the sound of it. Chocolate is a funny thing. Most people like it but we also have very different ways of enjoying it.
Honey-Roasted Plums with Thyme and Whipped Cream
Mouth watering plums covered with deep brown caramel – sprinkled with almonds.
Chocolate Soufflé
If you want to make this dish even more perfect then serve it with Hot Fudge Sauce
Raspberry Cobbler
Pinch off walnut-size pieces of dough and arrange evenly over berries, then scatter with almonds and sprinkle with remaining 2 tbs of sugar.
