APPLE MOJITO IN THE SNOW

You would think that the magnificent country of Iceland was the mecca for skiers from around the world. The paradise for those brave enough to ski down our breathtaking mountains and enormous glaciers. Hell – helisking should be our national sport. But guess what? We haven´t had proper snow here for years and most of us fly down to Italy or Austria to ski. Yes, that´s heartbreaking really but just when we were giving up on our national ski-team and were ready to focus on a summer sport instead all hell broke loose and for the first time in almost a decade we got some serious snow. There were some minor consequences… the emergency room was filled with people who slipped and fell – myself included who broke my wrist in early December.

It´s been fabulous and exciting and we – who have spent most of our time for the last few years in the Bahamas – are literally freaking out. The look on our son´s face when he could finally play in the snow was priceless and Christmas was amazing. We went to the north where the Chef´s parents live and spent almost two weeks there. It was magical to say the least. Being so far up north we only had daylight for about three to four hours a day. It´s pretty ruthless up there but this is what we grew up with… Traveling by snowmobiles… enjoying the holidays and spending time with family…

Since I missed my Happy New Year toast with you guys I´m going to compensate by giving you the recipe for a delicious Apple Mojito. It´s alcohol free – but please – add some rum or vodka to it to give it the extra kick that it needs.

The Recipe:

  • 1/2 lime, cut into wedges
  • 12 leafs of mint
  • 1 tbs granulated sugar
  • 1/2 cup apple juice
  • 1/2 cup club soda
  • 8 cubes of ice

Grind the lime, mint leafs and the sugar together with a wooden spoon. Put the mixture in a long drink glass. Put the ice in the glass and then pour the apple juice and fill it up with club soda.
