It´s Saturday night – well almost – so I´m contemplating my options. I´m home alone with my one year old since the Chef is in the Bahamas launching the new menu for the restaurant and my three year old is busy with his grandparents chasing sheep on the other side of Iceland (well – they are actually gathering sheep from the mountains but Icelandic sheep roam the wilderness during the summer but are gathered in the fall since the winter is to harsh for them). So like I said it´s just me and the one year old…
I´m staying in so my options are these. Pizza and red wine or … pizza and this absolutely deliciously yummy Cranberry Ginger Dream with Mint. The choice is quite simple really. I have have about two hours from when the little one falls asleep until I have to tuck in myself (because she wakes up ridiculously early and there is no morning mercy around here …) so I´m planning to eat the pizza and then watch an episode of my new favorite: Game of Thrones (I love medieval crap) with my unbelievable nice cocktail.
Here is the recipe – you can enjoy it alcohol free like the recipe is or add a generous splash of your favorite alcohol to turn it up a notch.

Cranberry Ginger Dream with Mint
- 4 cups cranberry juice
- 2 tbs granulated sugar
- 1/2 tsp lemon juice
- 1 inch ginger root
- 15 mint leaves
- ice
Peel and shred the ginger into a big bowl and add the sugar and lemon juice. Chop the mint leaves and add to the mixture and let sit for about 10 min. Next add the cranberry juice and the ice. Serve in tall drink glasses and decorate with ginger and mint leaves.
And add some alcohol (before you add the cranberry juice) and drink with a smile.
p.s. I really suck at naming drinks so I´ll refrain from now on.
