HAPPY HOUR: BLUE MARGARITA

Here in Iceland we are still technically waiting for the summer to come. It really is quite upsetting to say the least but global warming hasn´t pulled through this summer. I´m really not taking the matter of global warming lightly but to be honest we´ve been having great summers for the past few years and we´ve grown accustomed to nice weather. So needless to say it really upsetting when the weather is just plain shitty like it´s been all summer and according to meteorologists it´s the coldest June we´ve had in 59 years folks – that´s a lot!
The good news is that we are doing a BBQ for an Icelandic TV station and the Chef was not to happy that the first episode wont air until July 14th. But – since the weather has been so horrible no one has really been in the mood to fire up the grill and throw a party. So all is not lost. Hopefully the weather will improve and we´ll at last have the summer that we dream of and everyone will go mad with BBQ-fever a la Volli.
So – my drink today is blue – it´s kind of an ode to the miserable weather here and a reminder that then the going gets rough – the tequila get´s you going!
This is a Blue Margarita – made by the lady herself – Isabel Allison.

INGREDIENTS:
- BLUE MARGARITA
- 1 ½ OZ TEQUILA
- 1 OZ BLUE CURACAO LIQUOR
- 1 OZ LIME JUICE
- COARSE SALT
DIRECTIONS:
- Pour the ingredients into a cocktail shaker with ice cubes.
- Shake really really well.
- If desired (yes, please!) salt the rim of a chilled margarita glass.
- Pour contents, with ice, into the glass.
- Garnish with a lime wedge
- Put on some nice music, sit down and enjoy!
