The Icelandic Chef heads home

As it gets warmer here in the Bahamas we start packing. Well – not we but Volli and his parents which are all headed to Iceland. Volli is going back to cook at a function on Saturday. It´s the gala dinner for the Chef´s Club – which is one of those prestigious old clubs that all young chefs want to be members of (or so I´m told). Anyway, the dinner is this coming Saturday and the total number of guests is 250. Volli is in charge of the sorbet – and the theme is Icelandic nature or ingredients – something like that.
So – his twist on the sorbet will be quite interesting but I haven´t got all the details yet but this is what I think he´s doing:
A sweet-tea-gel made out of Icelandic herbs, hand picked by Volli´s uncle (I think). The tea-infused gel will be placed at the bottom of a martini glass and on top of that the sorbet will be placed. And the sorbet – it will be a rhubarb sorbet! He even managed to find fresh rhubarb this time of year which is quite a feet considering that the country is covered in snow and hounded by blizzards and all sorts of craziness.
That’s all I know for now but as soon as I get any pictures I´ll let you know…
