Pico de Gallo

  • ¼ onion, finely chopped
  • 2 tomatoes, seeded and finely chopped
  • 3 jalapenos, seeded and finely chopped
  • ¼ cup (60 ml) cilantro, finely chopped
  • 2 tbs fresh lime juice
  • 2 tbs olive oil
  • ½ tsp salt
  • ¼ tsp pepper

Put all ingredients in a medium sized bowl and mix together. Serve with chips. Yields: 1½ cup Preparation time: 10 min. Cooking time: 0 min.
