Mango-Black Bean Salsa
- ½ ripe mango
- 1 (15oz / 425 gr) can of black beans
- 1 tsp cumin
- 1 tsp ground oregano
- 1 tsp ground basil
- ¼ tsp cayenne pepper or ½ tsp fresh jalapeno
- 1 tsp garlic (1 clove)
- ¼ red onion
- ¼ tsp fresh lime juice (safi úr ½ lime)
- 1 tbs fresh cilantro
- Olive oil
- ¼ tsp salt
- ¼ tsp pepper
Chop the red onion, garlic and jalapeno finely. Next peel the mango and cut it into little cubes. Chop the fresh cilantro. Rinse and drain the black beans and mix in a bowl with the onion, mango, garlic, cilantro and jalapeno. Next ad the basil, oregano and cumin, season with salt and pepper. Drizzle a little bit of olive oil over the mixture and mix together.
