Chicken Stir-Fry with homemade Teriyaki Sauce

Ingredients:

Teriyaki Sauce

  • ¼ cup / 60 ml soy sauce
  • 1 cup / 240 ml water
  • ½ teaspoon ground ginger
  • ¼ teaspoon garlic powder
  • 5 tablespoon packed brown sugar
  • 1-2 tablespoon honey
  • 2 tablespoon corn starch
  • ¼ cup / 60 ml cold water

Chicken Stir-Fry

  • 2 lb. / 900 gr. Boneless skinless Chicken Breast (cut into stripes)
  • 1 med Red Onion sliced
  • 1 med Green Pepper sliced
  • 1 med Red Pepper sliced
  • 2 cups of Cabbage (Red or White) julienned
  • 2 Celery stalks diced
  • 3 Carrots peeled and julienned
  • 4 tablespoon of oil
  • ¼ cup / 60 ml homemade Teriyaki Sauce (see above)
  • 1 small fresh pineapple cut into cubes
  • 1 cup / 240 ml Teriyaki Sauce

Directions:

Teriyaki Sauce

  1. In a sauce pan mix together soy sauce, 1 cup / 240 ml water, ground ginger, garlic powder, brown sugar, honey. Heat through over medium heat.
  2. In a cup dissolve 2 tablespoon cornstarch and 1/4 cup / 60 ml cold water add to sauce pan mixture and stir until thickened.
  3. If the mixture becomes too thick it may be thinned out by adding water

Chicken Stir Fry

  1. Cut chicken into strips set aside
  2. Place in a bowl all vegetable and set aside
  3. In a separate pan add 2 tablespoon of oil sauté chicken until golden set aside
  4. Add rest of oil to a wok pan or sauté pan and heat through add vegetables and sauté until tender add the chicken strips, pineapple chunks and teriyaki sauce. Combine well and continue to cook for 2-3 minutes.
  5. If needed add more teriyaki sauce Serve immediately over fried rice or Egg Fried Rice.

Cooking Time: 20 min
