Chicken Marbella
Ingredients:
- 2- 2 ½ lb / 1150 gr chicken cut up (skin on)
- ½ head of garlic mashed finely
- 2 tbsp dried oregano
- Salt and ground pepper to taste
- ¼ cup / 60 ml red wine vinegar
- ¼ cup / 60 ml olive oil
- ½ cup / 120 ml pitted prunes
- ¼ cup / 60 ml stuffed Spanish green olives
- ¼ cup / 60 ml capers with a bit of the juice
- 3 bay leaves
- ½ cup / 120 ml brown sugar
- ½ cup / 120 ml white wine
- 2 tbsp fresh cilantro finely chopped for garnish
Directions:
In a large glass bowl combine all ingredients except brown sugar and white wine.
Add chicken to marinate and refrigerate for 4 – 5 hours or overnight.
Heat oven to 350 degrees/ 180 degrees
Arrange chicken in oven pan, spoon marinade over, and sprinkle with brown sugar and wine.
Bake 50-60 min at 350 degrees/ 180 degrees, basting often.
Serve with White Rice or Brown Rice garnish with cilantro
Preparation Time: 30 min
Cooking Time: 50 - 60 min
